“Le Patriarche” (The Patriarch) as a tribute to my grandfather, to my education, to my homeland!
Why
le patriarche ?
A family history, a terroir history
“We gave the name “The Patriarch” to our restaurant in Carcès, in homage to my grandfather”.

“My grandfather is THE key figure in the construction of my career, extremely present in my education and in the discovery of my terroir and its gastronomy.
My grandfather always took the time to take me everywhere: from hunting to fishing, from picking mushrooms to harvesting asparagus, from the Brignoles Fair to discover the local andouillette and wines at the Val Sausage Fair in early September. Without counting the inauguration of any kind, oil mill, wine cellars, the “tours” at friends butchers, restaurateurs, and even the fishmongers met live on their boats during the holidays in La Madrague! In short, nothing escaped! All good moments, shared pleasures and memories nourishing the mind … and the body!”
Born in Carcès (83), Rudy began his apprenticeship at the Clos des Vignes in Cotignac (83), after having developed a taste for cooking by working at the village butcher’s. Then Rudy continued his training at the Maison Roland Paix, a caterer for 3 generations, in Saint-Maximin-la-Sainte-Baume (83).
- first in the 3-star gourmet restaurant, the Villa Madie in Cassis as a clerk,
- then at the gourmet hotel-restaurant Le Belvédère in Porto-Vecchio in Corsica (2A) , as fish chef. “It was during my 2nd year at the Belvédère that I met Isalyne, my partner”.
- Thanks to Isalyne, who is more focused on seasonal hotel activities, they then leave for the 5* luxury hotel, the Koh-I Nor in Val Thorens, in winter and in parallel, at Manoir d’Hautegente**** in Dordogne, in the summer, for 3 years, during they will experience respective professional development…
- … which will then allow them to work for the same owner, in the summer at the Manoir d’Hautegente, and year-round at Jean’s Table, in Coly in the Périgord Noir.

Isalyne Lienne
Efficient, cheerful and welcoming
Isalyne starts her studies at the hotel school of Arbois in the Jura (39).
She quickly knows her first experience at the Palace ***** Hotel Royal d’Evian (74).
Then came the attraction for seasonal experiences, with summer, the Hotel **** La Tartane Saint-Amour (now La Tartane), in Saint-Tropez (83), and in winter at the Hôtel Alpes du Pralong***** in Courchevel (74) …
…until meeting Rudy in 2014, during a season at the Hotel Belvédère in Porto-Vecchio.
Since, our paths have often crossed, until this return to Rudy’s native lands and the discovery of the opportunity to exercise our talents within our own establishment, Le Patriarche, opened since 2019.
